Lime Sorbet
A sharp and refreshing lime sorbet with a clean citrus flavor and a smooth frozen texture. The zest is infused into the syrup for extra aroma, while the juice is added after cooling to keep the flavor bright.

Prepare the base

Zest 2 limes, then juice the limes until you have 150 ml of lime juice.

Add the water, sugar and lime zest to a small saucepan.

Heat gently until the sugar has dissolved, then remove from the heat.

Cover and let the lime zest infuse for 10 minutes.

Strain the syrup and let it cool completely.

Stir the lime juice and salt into the cooled syrup.
Freeze and spin

Pour the mixture into a Ninja CREAMi pint, without exceeding the MAX FILL line.

Close with the storage lid and freeze flat for 24 hours.

Once fully frozen, run the SORBET program.

Tips
- Depending on their size, 5 limes may be enough.
- Do not heat the lime juice directly: adding it after the syrup cools keeps the citrus flavor fresher.
- For a softer sorbet, replace 20 g of sugar with 25 g of honey, but the flavor will be slightly less clean.
- Citrus sorbets need enough sugar for texture. Reducing the sugar too much can make the result icy and hard.
