Mojito Lime Sorbet

A refreshing mojito-inspired lime sorbet with bright citrus, cool mint and a clean frozen texture. Each spoonful is sharp, fresh and lightly aromatic, with the kind of cooling finish that works especially well on warm days.

Prepare the base

  1. Zest 2 limes, then juice the limes until you have 150 ml of lime juice.

  2. Add the water, sugar and lime zest to a small saucepan.

  3. Heat gently, stirring, just until the sugar has dissolved, then remove from the heat.

  4. Add the mint leaves, cover and let infuse for 8 to 10 minutes.

  5. Strain the syrup and let it cool completely.

  6. Stir the lime juice and salt into the cooled mint syrup.

Freeze and spin

  1. Pour the mixture into a Ninja CREAMi pint, without exceeding the MAX FILL line.

  2. Close with the storage lid and freeze flat for 24 hours.

  3. Once fully frozen, run the SORBET program.

  4. If the texture is powdery or crumbly after the first cycle, run RE-SPIN.

Serve

Serve immediately, while the ice cream is still nice and creamy.

Storing leftovers

Tips

  • Depending on their size, 5 limes may be enough, but buy 6 to safely reach 150 ml of juice.
  • Infusing the mint gives a lighter, cleaner flavor than blending the leaves directly into the base.
  • For a stronger mint flavor, lightly tear the mint leaves before infusing them.
  • For an adult version, add 10 ml white rum to the cooled syrup, but avoid adding more or the sorbet may freeze too softly.
