Lemon Basil Sorbet

A bright and refreshing lemon basil sorbet with a clean citrus flavor and a gentle herbal finish. The basil is infused into the syrup instead of blended raw, so the result stays fresh and aromatic without tasting grassy.

Prepare the base

  1. Zest 1 lemon, then juice the lemons until you have about 170 ml of fresh lemon juice.

  2. Juice the lime until you have about 25 ml of fresh lime juice.

  3. Add the water, sugar, lemon zest and salt to a small saucepan. Warm gently while stirring until the sugar is fully dissolved.

  4. Remove from the heat, add the basil leaves, cover and let infuse for 12 to 15 minutes.

  5. Strain the syrup through a fine sieve, pressing the basil lightly to extract the flavor. Let the syrup cool.

  6. Stir the lemon juice and lime juice into the cooled basil syrup.

Freeze and spin

  1. Pour the mixture into a Ninja CREAMi pint, without exceeding the MAX FILL line.

  2. Close with the storage lid and freeze flat for 24 hours.

  3. Once fully frozen, run the SORBET program.

  4. If the texture is powdery or crumbly after the first cycle, run RE-SPIN.

Serve

Serve immediately, while the ice cream is still nice and creamy.

Storing leftovers
