Prepare the base

  1. Rinse the blackberries and blend them until completely puréed.

  2. Press the purée firmly through a fine sieve until only a relatively dry pulp of seeds remains.

  3. Rinse the blender, then return the strained blackberry purée to it.

  4. Add the sugar, whole milk, heavy cream and lemon juice, then blend on low speed until the sugar has dissolved and the base is evenly combined.

Freeze and spin

  1. Pour the mixture into a Ninja CREAMi pint, without exceeding the MAX FILL line.

  2. Close with the storage lid and freeze flat for 24 hours.

  3. Once fully frozen, run the ICE CREAM program.

  4. If the texture is powdery or crumbly after the first cycle, run RE-SPIN.

Serve

Serve immediately, while the ice cream is still nice and creamy.

Storing leftovers

Tips

  • Use dark, fully ripe blackberries for the strongest fruit flavor and deepest natural color.
  • Press the fruit thoroughly through the sieve. Leaving too much purée around the seeds reduces both the fill and the blackberry intensity.
  • Avoid blending the finished dairy base for longer than necessary, because excessive aeration can make it rise above the fill line.
