Prepare the base
-
Rinse the blackberries, then blend them until completely puréed.
-
Press the purée firmly through a fine-mesh sieve into a bowl until only a relatively dry pulp of seeds remains, then discard the seeds.
-
Return the strained blackberry purée to the blender, add the sugar, lemon juice and salt, then blend until the sugar has completely dissolved.
Freeze and spin
-
Pour the mixture into a Ninja CREAMi pint, without exceeding the MAX FILL line.
-
Close with the storage lid and freeze flat for 24 hours.
-
Once fully frozen, run the SORBET program.
-
If the texture is powdery or crumbly after the first cycle, run RE-SPIN.
Still not right after re-spinning? See how to fix the texture .
Serve
Serve immediately, while the ice cream is still nice and creamy.
Storing leftovers
Flatten any remaining ice cream to level the surface before returning the pint to the freezer. This will make the next spin easier and reduce unnecessary strain on the machine. Learn more about after-serving habits.
Tips
- Use dark, fully ripe blackberries for the strongest fruit flavor, deepest natural color and least acidic result.
- Press the fruit thoroughly through the sieve so enough purée reaches the container while the finished sorbet stays smooth.
- The base should taste slightly sweeter than the intended finished sorbet because freezing softens perceived sweetness.
