Lemon Ice Cream

Prepare the base

Squeeze the 2 lemons to collect the juice.

Finely grate the zest of 1 lemon.

In a mixing bowl, whisk the sugar, lemon juice, lemon zest until the sugar starts to dissolve.

Add a pinch of fine salt and whisk again.

Add the Greek yogurt and whisk until smooth.

Pour in the whole milk and heavy cream, then whisk again until fully combined.
Freeze and spin

Pour the mixture into a Ninja CREAMi pint, without exceeding the MAX FILL line.

Close with the storage lid and freeze flat for 24 hours.

Once fully frozen, run the ICE CREAM program.

Serve
