Prepare the base
Peel the cucumber, trim the ends and grate it coarsely.
Place the grated cucumber in a clean kitchen towel and squeeze firmly until no more liquid drips out.
Peel and finely grate the garlic. Rinse the dill, pat it completely dry and roughly chop it. Squeeze the lemon half and reserve the juice.
Add the drained cucumber, full-fat Greek yogurt, dill, garlic, lemon juice, extra-virgin olive oil, granulated sugar and salt to a blender.
Blend on low speed just until smooth and evenly combined, scraping down the sides if needed.
Freeze and spin
Pour the mixture into a Ninja CREAMi pint, without exceeding the MAX FILL line.
Close with the storage lid and freeze flat for 24 hours.
Once fully frozen, run the FROZEN YOGURT program.
No FROZEN YOGURT? Use LITE ICE CREAM instead.
If the texture is powdery or crumbly after the first cycle, run RE-SPIN.
Still not right after re-spinning? See how to fix the texture.
Serve
Serve a small scoop with grilled lamb, falafel, roasted vegetables or warm pita bread.
Enjoy!
Storing leftovers
Flatten any remaining ice cream to level the surface before returning the pint to the freezer. This will make the next spin easier and reduce unnecessary strain on the machine. Learn more about after-serving habits.
Tips
- Drain the cucumber thoroughly. Excess cucumber water can make the frozen yogurt harder and icier.
- Full-fat Greek yogurt and olive oil add body while preserving the fresh yogurt tang.
- The sugar is deliberately restrained to keep the recipe savory, but reducing it further may produce a harder frozen texture.
- Raw garlic becomes prominent in a cold base, so use the measured amount rather than adding extra before freezing.
