Ferrero Rocher Ice Cream
A rich chocolate-hazelnut ice cream with a smooth roasted-praline base and pieces of crisp wafer, milk chocolate and hazelnut throughout. The flavor is deep and nutty, with a contrasting crunch inspired by Ferrero Rocher chocolates.

Prepare the base

Break the milk chocolate into small pieces and place it in a heatproof bowl.

Heat 100 ml of the whole milk until steaming but not boiling, pour it over the milk chocolate and leave for 1 minute. Whisk until completely melted and smooth.

Add the remaining 155 ml of whole milk, heavy cream, roasted hazelnut paste, sugar, cocoa powder and salt. Blend until completely smooth, then let the base cool to room temperature.
Freeze and spin

Pour the mixture into a Ninja CREAMi pint, without exceeding the MAX FILL line.

Close with the storage lid and freeze flat for 24 hours.

Once fully frozen, run the ICE CREAM program.

Prepare the mix-ins

Quarter the Ferrero Rocher and roughly chop the roasted hazelnuts. Keep both covered at room temperature.

Make a hole about 4 cm wide down the center of the ice cream, add the Ferrero Rocher pieces and chopped hazelnuts and run the MIX-IN program.
Serve
Serve immediately, while the ice cream is still nice and creamy.
Storing leftovers
Flatten any remaining ice cream to level the surface before returning the pint to the freezer. This will make the next spin easier and reduce unnecessary strain on the machine. Learn more about after-serving habits.
Tips
- Use roasted pure hazelnut paste rather than a sweetened spread to create a pronounced praline flavor without making the base excessively sweet.
- Keep the Ferrero Rocher pieces fairly large so some wafer texture remains after the MIX-IN cycle.
- For maximum crunch, reserve a little chopped hazelnut and one freshly quartered chocolate to scatter over the ice cream when serving.
