Prepare the base

  1. Gently rinse the basil leaves and pat them completely dry.

  2. Add the whole milk, heavy cream, granulated sugar and salt to a small saucepan. Warm over low heat, whisking until the sugar is fully dissolved and the mixture is steaming but not boiling.

  3. Remove from the heat, add the basil leaves, cover and leave to infuse for 20 minutes.

  4. Strain through a fine-mesh sieve, pressing the leaves gently, then discard the basil.

  5. Add the cream cheese in small pieces and blend with an immersion blender until smooth.

  6. Leave the base to cool to room temperature.

Freeze and spin

  1. Pour the mixture into a Ninja CREAMi pint, without exceeding the MAX FILL line.

  2. Close with the storage lid and freeze flat for 24 hours.

  3. Once fully frozen, run the ICE CREAM program.

  4. If the texture is powdery or crumbly after the first cycle, run RE-SPIN.

Serve
